Protected product
The “Galician Veal” P.G.I. only covers livestock from the Rubia Galega and Morenas Do Noroeste breeds, crosses between the two and crosses between these and other breeds, on farms controlled by the Regulatory Board.
The livestock must be fed according to normal traditional land uses in Galicia, according to typical methods connected with the Galician meat industry and which are in turn connected to cultural and sociological factors. Feed should include products such as corn, potatoes, turnips, dry or fresh forage and concentrates based on cereals approved by the Regulatory Board.
It is expressly forbidden to use products that may interfere in the animal’s normal rate of growth and development, as well as the use of recycled animal derivatives.
All products are identified with certification labels issued by the Protected Geographical Indication, with distinctive elements for Galician Veal (“Galician Veal” and European logotype of protected geographic varieties), numeric code and commercial category (“Supreme Galician Veal” has labels with a pink background, and Galician Veal with a yellow background). These labels accompany the product throughout all of the marketing process. Sliced fillets in trays also have official labels controlled by the PGI.
Origin
The area of production and slaughter corresponds exclusively to the Autonomous Community of Galicia.
Characteristics
The Protected Geographical Indication covers all fresh veal from animals born, raised and slaughtered in Galicia. The meat has a good balance between its fat and muscle content, is very tender, succulent and with a soft texture. The muscle has a fine grain and firm consistency, with a colour that ranges from light pink to light red.
